Salt & Pepper Whiting with Mango Salsa
There is nothing better than cooking up some fresh fish that you have just caught from the Deli section of the supermarket.
One of the easiest recipes I know of for cooking fish is a simple salt and pepper dusting that brings out the true flavour of whatever fish you may be using. It's takes no time at all and is a good base for some yummy side dishes.
The Salt and Pepper Whiting that I cooked I served with a really simple Mango Salsa just using some fresh ingredients I had in the fridge.
Mango Salsa
Serves 2
Ingredients
- 1 Ripe Mango - Diced
- Coriander - small handful - roughly chopped
- 1/2 Avocado - Diced
- 1/2 Capsicum - Diced
- 1/2 Red Onion - Diced
- 2 Tomatoes - Diced
- Juice of Lime
Method
Combine all ingredients together in a small bowl, drizzle with lime juice and season with salt & pepper to taste.
Salt & Pepper Whiting
Serves 2
Ingredients
- 6 Small fillets - Whiting or similar
- Plain flour
- Pepper
- Chilli flakes
- Fish Sauce
- Oil for shallow frying
Method
Combine the flour, chilli and pepper in a bowl. Marinate the fish fillets in the fish sauce for 5 minutes, then drain each piece and roll in the flour mixture. Heat your oil in a deep frying pan over medium heat until hot. Fry fish in batches for about 2 minutes or until golden, it won't take long to cook. Remove from the pan and drain on paper towel then serve with Mango Salsa.
This is a simple midweek dish that can be cooked in a matter of minutes. The whiting doesn't have an overly fishy taste to it and the mango is the perfect partner for it.
