Beef, Chickpea and Mango Curry

Well I return with good news! This blog and my YouTube channel will finally have new content added weekly. I have been so busy with my regular job that blogging and videos have taken a back seat for a while. But I am happy to be able to bring you some fresh recipes and kitchen ideas.

To celebrate...I present to you one of the easiest recipes I have made in a long time. I genuine one pot wonder.

Lets set the scene. You come home from a big day at work, you are completely buggered and really don't want to spend hours in the kitchen cooking up your dinner.


Enter my Beef, Chickpea & Mango Curry. Nothing beats a good curry. Flavoursome, warm and well basically delicious. This recipe calls for only a few ingredients and a lot of the canned ingredients can be substituted for fresh. This just happened to be what was in my pantry at the time of cooking.

Lets call it a mystery box meal for the time being.

Beef, Chickpea & Mango Curry

Serves 4
Prep Time: 5 minutes
Cook Time 40 minutes

400g beef fillet, I used porterhouse steak, diced
1/2 jar Korma paste
400g can of coconut cream
400g can of diced tomato
1 brown onion, chopped
400g can of chickpeas, drained
400g can of mango slices
steamed rice, to serve

Heat medium sauce pan and add a tablespoon of vegetable oil. Brown the beef on all sides, then add everything else in. Stir to combine, bring to the boil then reduce to a simmer and cook for 30 minutes or until beef is tender.

Serve up on steamed rice and garnish with freshly chopped coriander.

I told you it was easy. No effort curry in a hurry. You can substitute the beef for anything from chicken to fish. Your choice.
